We're in the middle of a Winter storm. Six inches of snow by tomorrow. Soup just sounds so snuggle warm. For a heart healthy choice I made this Curried Corn Soup with Spicy Chile-Ginger Sauce. My first time making it. Only around 141 calories per serving. It had a little bit to it and quite filling. Love it! Even my husband loved it. Shhhhh, don't tell him I used coconut oil in the soup. He doesn't like coconut anything. What he doesn't know won't hurt him. Hah hah hah! We'll even have leftovers for lunch tomorrow.
